sharepoint List Items Deleted Without A Trace

I have a customer contact list that is not showing any contacts in it. They're all gone. How can I restore it (it not in recycle bin) and how can I find out who deleted the items? This is Sharepoint 2010 on a SBS2011 server.

They were in a site collection but there was no way to view the Audit. I think that's an Enterprise feature. Anyways, I found the person that deleted everything and all of the contacts were in their recycle bin. I would think as administrator that I would be able to see without going from computer to computer.
